Sponge gourd is one of the popular vegetable similar to ridge gourd, famous for its inner sponge. The only difference is sponge gourd has smooth surface. This belongs to the family of cucurbitaceae and genus of Luffa. This vegetable contains vitamin A and c. Fully ripe sponge gourds have high volume of fibrous which is being used as cleaning agent (utensils) and making shoe-soles ,table mats .This vegetable is cultivated in most of the states of India. It is a vine like plant, so it is usually along a fence for support. As it is not a typical garden plant, some patience is required for the proper growth and harvest of the luffa. Once harvested the it needs be dried out and the shell can be peeled off, revealing the inner sponge-like texture. It is also used widely in Indian cuisine, in both the southern and northern styles.
